What's Bar B Que about ?

Bar-B-Que, BBQ, Barbecue or barbeque is a term used with significant regional and national variations to describe various cooking methods that use live fire and smoke to cook the food. Although smell predominates, taste is not altogether absent. Smoking foods creates the Maillard reaction, which occurs when heat on a dry surface breaks down sugars and amino acids.

The word “barbecue” comes from the Caribbean word “barbacoa.” Originally, a barbacoa wasn't a way of cooking food, but the name of a wooden structure used by Taino Indians to smoke their food.

Brisket is the king of BBQ. The process of smoking down a large piece of beef town to a tender, succulent plate of meat with a coat of beautiful bark is what outdoor cooking is all about. Chicken, ribs, (almost anything pork) or any large cut will work well too. 

Meat and fire are primal. Everyone should try. All are welcome to come and compete with us. A great way to learn and have fun doing it.
